You can use any bacon, including natural hardwood, smoked, maple cured, Applewood smoked, sugar-cured bacon, or mesquite smoked. They all taste slightly different, so it is essential to know your favorite. It would be best to use thinly sliced bacon to ensure it gets crispy. If your bacon is too thick, it will take longer, and the pineapples will be overcooked.

How to Choose and Cut Pineapple for Bacon-Wrapped Pineapple Bites

To ensure that your bacon-wrapped pineapple bites are flavorful and juicy, it’s essential to choose a ripe and sweet pineapple and cut it evenly into bite-sized pieces. When selecting a pineapple, look for one that is firm and heavy for its size, with a fragrant, sweet aroma. Avoid pineapples with soft spots or bruises or those with dried-out leaves. To cut the pineapple into evenly-sized pieces, cut off the top and bottom so that the pineapple stands upright on a cutting board. Next, slice off the skin in thin, vertical strips, working your way around the fruit. Once the skin is removed, use a sharp knife to cut the pineapple into bite-sized pieces, about 1 inch in diameter. Remove the core from each piece, as it can be challenging and fibrous. With these tips, you’ll have perfectly sized and deliciously sweet pineapple bites to use in your bacon-wrapped appetizers!

Recipe Tips & Suggestions

Tips for the Best Sweet and Spicy Bacon-Wrapped Pineapple

Fresh pineapple works better as canned pineapple has as much liquid. Even when you dry the canned pineapples, they won’t work as well as fresh ones.

Let the pineapple soak with sriracha sauce and paprika for about 15 minutes before using them. That way, they can absorb the flavor and give the dish an extra kick of spice.

Use a baking rack so that all sides of the bacon get crispy. Keep the bacon straight on the tray. Also covering the tray with foil would be best to catch any dripping from the bacon.

Make a paste with brown sugar and a bit of pineapple juice. The paste should be moist but not wet. This will help the brown sugar stick to the bacon.

Preheat the oven to 400 F and have it ready for when you are prepared to start the recipe.

Use thin strips of bacon since thick bacon will take longer to cook. Also, thick bacon strips will result in mushy pineapple inside.

Rana’s Notes!

Don't throw away the pineapple skin and core! They contain valuable nutrients and can be used to make a refreshing and healthy drink. Simply add the skin and core to a pot of boiling water and let simmer for about 30 minutes. Then, strain the liquid and let it cool. You can add sweetener and lime juice to taste, and enjoy a delicious and nutritious drink that's full of fiber, vitamins, and antioxidants. This is a great way to minimize food waste and get the most out of your pineapple!
