Pineapple Jalapeño salsa is a sweet and spicy recipe that is refreshing and perfect for adding a bit of sweetness to a dish. This is one of my go-to simple salsas to make. It is bright in color and balanced in flavor. I love to eat this instead of regular salsa since the pineapple gives it a sweet, fruity flavor. The depth of flavor will wake up your taste buds! My secret ingredient is adding a bit of jicama, which gives it a little crunch!

The best part of salsa is that you can add whatever you want! Some people like to add mango to add sweetness, but I like to focus on pineapples. You can also use it as an ingredient for dinner since it adds just the right amount of sweetness and spiciness to your dish. Pork chops are one of my favorite dishes, with pineapple jalapeno salsa. Try it with fish dishes like Herb-crusted wild halibut or easy oven-baked halibut.  This pineapple jalapeno salsa is also excellent for dipping with toasted herb pita chips

How to select fresh Pineapple

When choosing the right pineapple for making pineapple salsa, looking for bright golden-yellow skin and a sweet smell is essential. You want to pick a pineapple that is ripe but not too soft. A good test is to press the pineapple’s outside gently; if it feels slightly soft, it’s ready to be used. Look out for bruises or moldy spots on the skin, as these can affect the taste of your salsa.

1 jalapeno seeded and diced (you choose how spicy you want the salsa)
½ red onion (peeled and chopped)
½ medium-size jicama (peeled and diced)
3 tablespoons lime juice
1 teaspoon salt
½ teaspoon ground coriander
1 teaspoon Aleppo pepper or your favorite pepper
¼ cup freshly chopped cilantro leaves and extra for topping
¼ cup rice vinegar
Drizzle of olive oil

Recipe Tips & Suggestions

When adding the jalapeños, only add a bit at a time to ensure it is not too spicy. The seeds will also make the salsa spicier, so you can remove the seeds if you only want the jalapeno flavor without the spice. 

After you make the salsa, let it sit in the refrigerator for 20 minutes so that all the flavors marinate together.

How Should I Store Salsa? Leftover pineapple jalapeno salsa can be kept in an airtight container and stored in the refrigerator for 2 to 3 days. If you do not have Tupperware, it can also be stored in a bowl with saran wrap covering the bowl to keep it fresh.
