How to Make Easy Tunisian Couscous Recipe

Preparation

Prepare the Vegetable Medley:
Heat 2 tablespoons olive oil in a skillet on medium heat.
Sauté diced onion for 3 minutes.
Add diced carrots and cook for 4 minutes.
Stir in zucchini and garlic for 30 seconds.

1 teaspoon caraway ground
1 ½ cups broth (either vegetable or water)
1 can 15 oz garbanzo beans (drained and rinsed)
2 tablespoon lime juice or lemon
Salt and pepper
To prepare the couscous:
2 tablespoons olive oil
2 cups Couscous
1 teaspoon salt
4 cups hot water or choice of broth
Add chopped cilantro for garnish once you're finished preparing the couscous.
