Mediterranean Shrimp in Harissa Sauce

3 tablespoons olive oil 1 sweet onion sliced 2 red peppers sliced 4 garlic cloves minced 1 teaspoon ground cumin 1/2 teaspoon ground black lime 1 teaspoon paprika 3 oz Spanish pimento olives sliced 2 cups tomato sauce or 1 tablespoon tomato paste 1 cup warm water 2 teaspoons Harissa 2 lbs shrimp 1/2 cup lime juice and zest 1/4 cup fresh cilantro chopped dash of salt and pepper to your taste

Heat skillet & add oil. Sauté onion and red pepper until soft.

Add tomato sauce, paste, Harissa, and warm water. Stir and simmer until sauce thickens (15 mins).

Add shrimp and cook until pink. Add lime juice, zest, cilantro, salt & pepper. Stir and cook for 2 more minutes.

Serve over rice, pasta, or with crusty bread. Enjoy!

Spicy Harissa Shrimp:  Pro Tips •  Add shrimp near the end to prevent overcooking. •  Adjust heat with Harissa; less is more. •  Store airtight & refrigerate for 3 days. •  Reheat 1-2 mins in microwave.
