Quick Tunisian Couscous: A North African Delight

2 tablespoons olive oil 2 carrots (cut into a medium size bites) 2  zucchinis (sliced into medium size bites) 3 garlic cloves (minced) 1 tablespoon tomato paste 1 tablespoon harissa 1 teaspoon cumin 1 teaspoon coriander 1 teaspoon caraway ground 1 ½ cups broth 2 tablespoons lime juice or lemon Salt and pepper

Sauté onions for 3 mins. Add carrots for 4 mins. Stir in zucchini and garlic for 30 seconds.

Mix in spices and tomato paste. Add broth and garbanzo beans. Simmer 10 mins. Add lime juice.

Heat oil, toss couscous, add hot water and salt.

Mix veggies and couscous gently. Turn off the heat, and cover for 5 mins. Fluff and serve.

Make Tunisian Couscous. Great alone or as a side, it's versatile and quick.
