Quick & Zesty Lemon Greek Yellow Rice

1 cup long-grain white rice 2 tablespoons unsalted butter 2 cloves garlic, minced 1 teaspoon dried oregano 1/4 cup freshly squeezed lemon juice 1 teaspoon lemon zest 2 cups chicken broth ½ cup of fresh herbs like parsley, dill, mint, oregano basil

Rinse, soak rice for 15-20 mins. Strain and set aside. Melt Ghee, sauté garlic & oregano for 45 secs. Remove from heat

Melt Ghee in the pot, and coat rice well.

Mix lemon juice, zest, and broth with rice. Add garlic-oregano mix and salt, then boil.

Stir with a fork, cover, and simmer on low for 20 mins.

Turn off heat, let sit covered 10 mins. Add fresh herbs, fluff with a fork, and serve.
