Tomato & Roasted Garlic Spaghetti Sauce

Tomato & Roasted Garlic Spaghetti  Sauce Recipe:

15 fresh ripe tomatoes 2 heads of garlic, separated but not peeled 4 tablespoons olive oil Salt and pepper to taste 1 large onion, finely diced 2 carrots, finely grated 2 tablespoons tomato paste 1 tablespoon sugar 1 bunch of fresh basil

Collect ingredients and  preheat oven to 400°F.

Slice tomatoes, and arrange them on a baking sheet with garlic.

Drizzle oil, add salt, and pepper. Roast until soft (~35 mins), then broil low until charred.

Allow tomatoes to cool for safe handling.

After cooling, peel tomato skins and squeeze garlic from its skin

Heat oil in a pot, soften onions and carrots. Stir in tomato paste, add roasted tomatoes and garlic, 

and break up with a spoon. Simmer for at least 30 mins.

Serve your homemade spaghetti sauce over your favorite pasta, with a sprinkle of Parmesan and some fresh basil.
