Traditional Greek  Salad Recipe:

1 English cucumber 4 tomatoes cut into large chunks 1 cup kalamata olives 1/2 red onions thinly sliced 6 oz. feta cheese 2 tablespoons red wine vinegar 1/4 cup of extra virgin olive oil 2 teaspoons Greek oregano 1/4 teaspoon salt 1/2 teaspoon black pepper

Partially peel cucumber, chop into large pieces. Chunk the tomatoes,  saving juices.

Slice onion and arrange all on a platter.

Whisk together olive oil, red wine vinegar, salt, pepper, and oregano.

Drizzle olive oil, top with feta. Add more oil if desired, and enjoy!

Fun Fact: No lettuce in Greek salad! Why?  Greeks enjoy this summer dish when lettuce, a winter crop in Greece, is not available. Thus, the traditional 'Horiatiki' is always lettuce-free.
