3 ½ cups all-purpose flour
1 ½ teaspoon cream of tartar
1 teaspoon baking soda
1 cup (2 sticks)of unsalted butter at room temperature
1 ½ cup granulated sugar
2 tablespoons rum
2 teaspoons nutmeg
1 large egg (plus two egg yolks at room temperature)
1 tablespoon vanilla
Sugar rolling:
¼ cup sugar mixed with ½ tablespoon nutmeg
Icing (mix all the ingredients until silky, no clumps)
2 cups powdered sugar
1 stick butter (soft but not melted)
1 teaspoon nutmeg
1 tablespoon rum
4 tablespoons eggnog

Preparation

Preheat the oven to 350°F. Using a hand mixer or a stand mixer with a paddle attachment, cream the sugar and butter together until smooth and light in color.

Mix in the eggs, followed by the rum and vanilla. Beat until well combined.

In a separate bowl, mix and sift the flour, cream of tartar, baking soda, and salt together.

Gradually add the dry ingredients to the creamed butter mixture, mixing until the dough comes together. Scrape down the sides of the bowl as needed.

Using a small ice cream scoop or your hands, form the dough into balls about 35 grams each. Roll each ball in the sugar glaze and place them on baking sheets lined with a silicone mat or lightly sprayed with cooking spray.

Bake at 350°F for 13-15 minutes, until the bottoms are lightly caramelized and the centers are fully cooked. Allow the cookies to cool completely on a wire rack before applying the icing.

Hold each cookie upside down and dip it into the icing until fully coated. Place the cookies on a cooling rack and let the icing set for about 2 hours.

How To Store Your Eggnog Cookies?

If you and your loved ones don't eat them all in one sitting, you can store your cookies in an airtight container and pop them in the fridge. The cookies will stay tasty for about four days before they deteriorate in quality. But I doubt they will last that long! So, after you pull them from the fridge, please bring them to room temperature before serving. If you want to make these eggnog cookies ahead of time, they can also be stored in the freezer. Just freeze the cookies and frosting separately. After the cookies have been thawed, you can frost them before serving.
