1 stick unsalted soft butter ( 8 tablespoons )
1 cup granulated sugar
2 large eggs at room temperature
1 teaspoon vanilla extract
1 lemon Zest
½ cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups frozen blueberries
2 tablespoons sugar for topping

Preheat and Prepare Your Muffin Tin
Preheat your oven to 425°F — this higher temperature helps the muffins rise beautifully with a domed top. Next, prepare your muffin tin by greasing each cavity thoroughly. You can either coat them with butter and a dusting of flour or spray them with coconut oil. Don’t forget to grease the tips of the tin tops as well, so the muffin tops release easily after baking.

Prepare the Batter Base
In a medium bowl, sift together the all-purpose flour, baking soda, baking powder, and salt. Set aside. In a large separate bowl, cream the butter and granulated sugar using a hand mixer until light and smooth. Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract and lemon zest until fully incorporated.

Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined — the batter should be smooth with no visible lumps, but avoid overmixing.

Add Blueberries & Fill the Muffin Tin
Gently fold in the blueberries using a spatula, making sure they’re evenly distributed throughout the batter. Using an ice cream scoop or spoon, fill each muffin cavity about ¾ full. Sprinkle the tops with a bit of extra sugar for a golden, slightly crisp finish.

Bake the Muffins
Place the muffin tin in the preheated oven and bake at 425°F for 5 minutes. Then, reduce the temperature to 375°F and continue baking for 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
