How to Marinate and Cook the Chicken
1. Make the Marinade: In a bowl, whisk together the Greek yogurt, minced garlic, 1 tablespoon olive oil, lemon juice, vinegar, oregano, salt, and pepper until well combined. 2. Marinate the Chicken: Slice the chicken breasts horizontally to create thinner cutlets. Place them in a deep bowl, pour over the marinade, and mix well to coat. Cover and refrigerate for at least 1 hour. 3. Cook the Chicken: Heat 1 tablespoon olive oil in a large skillet over high heat. Cook the marinated chicken breasts for about 6 minutes per side, or until golden and fully cooked through. Let rest for 5 minutes, then slice into thin strips for the wraps.

How to Make the Fresh Herb Salad
In a large bowl, combine the sliced tomatoes, cucumber, and red onion. Add the chopped parsley and dill, and toss gently to mix. In a small bowl, whisk together the olive oil and lemon juice until emulsified. Pour the dressing over the salad and toss until evenly coated. For a sweet and tangy twist, drizzle pomegranate molasses over the top just before serving (optional but highly recommended!).

How to Assemble the Mediterranean Chicken Wrap
Warm the pita bread in a skillet or a low oven until soft and pliable. Spread 2–3 tablespoons of hummus over each pita. Layer the sliced chicken in the center, then top with the fresh herb salad, pickles, and pepperoncini. Wrap it up and enjoy immediately while warm!

Fold tightly to secure the fillings
Your perfect Mediterranean Chicken Wrap is ready—fresh, flavorful, and ideal for sharing with your loved ones at lunchtime or anytime!

Rana’s Notes!

What To Do If Your Wrap Breaks
Warm the Bread: Warming your pita or tortilla makes it more pliable. Just a few seconds in a microwave or a minute on a hot griddle can make all the difference
Don't Overfill: It can be tempting to load up your wrap with all your favorite ingredients, but too much filling can make the wrap break. Aim for a balanced ratio of ingredients to wrap.
Layer Strategically: Place softer ingredients like hummus or sauces at the bottom to act as a cushion for more solid elements like chicken or vegetables.
Roll Carefully: When you're rolling your wrap, make sure to tuck in the sides and roll as tightly as possible without squeezing the ingredients out.
Emergency Fix: In a pinch, if your wrap does break, you can always turn it into a delightful and still-delicious salad bowl!
