2 cloves of garlic

1 lb. of fresh cherry tomatoes, diced into quarters
1 small onion, diced
½ teaspoon of salt
¼ teaspoon of black pepper
1 tablespoon of goat cheese
Fresh basil leaves

Preparation

Preheat your oven to 425 F. Slice your sourdough bread and drizzle each slice with extra virgin olive oil. Place the bread in the oven or on a grill, toasting until it reaches your desired level of crispness. While the bread is toasting, dice your cherry tomatoes and small onion. Combine these in a bowl.

While the bread is toasting, dice your cherry tomatoes and small onion. Combine these in a bowl. To the same bowl, add your goat cheese, salt, and pepper. Mix these ingredients well. Once your bread is toasted, remove it from the oven or grill. Immediately rub each slice with a clove of garlic, making sure to cover all the bread's surfaces. Cut the garlic-rubbed bread diagonally into 2 or 3 pieces.

Top each bread piece with the tomato and onion mixture. Add fresh basil leaves on top of the tomato mixture. Drizzle each bruschetta piece with a bit more extra virgin olive oil, sprinkle with a pinch of salt, and serve. Enjoy your taste of the Mediterranean lifestyle
