1 medium cucumber, peeled, deseeded, and finely diced

Prep the Cucumber
Peel the cucumber, then finely dice or grate it. Sprinkle with a pinch of salt and stir to combine. Transfer the salted cucumber onto a paper towel or clean kitchen towel set over a strainer or bowl. Let it sit for about 15 minutes to release excess water. After resting, gather the towel and gently squeeze out as much moisture as possible. This step is essential to keep your tzatziki thick, not watery.

Make the Garlic Paste & Whisk the Yogurt
While the cucumber is draining, prepare the garlic paste by combining finely minced or grated garlic with a pinch of salt. Use the flat side of your knife or a spoon to mash it into a smooth paste — this mellows the sharpness and blends more evenly into the yogurt. In a mixing bowl, add the Greek yogurt and whisk it vigorously for 1–2 minutes using a whisk or hand mixer. This helps lighten the texture, making the tzatziki extra smooth and creamy.

Combine the Ingredients
Add the garlic paste, lemon juice, finely chopped fresh dill, finely chopped fresh mint, and the squeezed cucumber to the bowl of whipped yogurt. Stir well until all the ingredients are fully combined and the tzatziki is smooth, creamy, and flecked with herbs.

Chill and Serve
Before serving, chill the tzatziki sauce in the refrigerator for 1–2 hours to let the flavors fully develop and the texture thicken. Once it's nicely chilled, serve it with warm pita bread, fresh veggies, or as a creamy, tangy sauce for gyros, grilled meats, or grain bowls.
