2 cups Greek yogurt
1 tablespoon Extra Virgin Olive Oil
A pinch of ground white pepper (optional)

Prep the Cucumber: After peeling and deseeding your cucumber, finely dice it. Sprinkle the diced cucumber with a pinch of salt and place it on a paper towel inside a colander. Let it sit for about 15 minutes to allow the salt to draw out excess water.

Garlic Paste: While the cucumber is draining, create a garlic paste. Combine the finely minced or grated garlic with a pinch of salt. Whisk the Yogurt: In a mixing bowl, add the Greek yogurt. Using a whisk or a hand mixer, vigorously whisk the yogurt for a couple of minutes until it becomes lighter and slightly fluffy in texture.
