Prepare the syrup. In a medium-sized pot, bring the water and sugar to a boil. Add the lemon juice, peel, vanilla extract, and cinnamon stick, and immediately reduce heat to low. Stir until all ingredients are combined. Simmer for 10 minutes, then set aside two tablespoons of the syrup for later use in the filling.

While the syrup is simmering, prepare the apples. Using a sharp knife or a peeler, peel off the skin of each apple and hollow it out with either a small spoon or apple corer. Discarding seeds and core. Squeeze some fresh lemon juice inside.

Place apples upright into the simple syrup. Over low heat, cook until tender for large apples, about 15 minutes, moving the apples around every two minutes. Remove and keep until they cool down a bit to handle. Save the simple syrup.

Prepare the filling. In a small bowl, combine hot milk with ground walnuts and butter until well blended. Then add two tablespoons from your prepared syrup from earlier and stir until all ingredients are combined.

Divide the mixture equally between four apples and fill them up with stuffing as much as possible without spilling over onto the sides or overflowing on the top portion of each apple.

Either use a homemade whipped cream or a ready one; add some to the top add a few chopped walnuts and cinnamon, served with a side of simple syrup. Enjoy!
