1 small shallot chopped
1 1/2 cups baby spinach
1 1/2 cups sweet peas (frozen Okay)
9 large eggs at room temperature
3/4 cup heavy cream
3/4 cup whole milk
1.5 oz gruyere cheese shredded
1.5 oz feta cheese crumble
1/4 cup fresh dill chopped
1/4 cup fresh basil chopped
1/4 cup fresh dill chopped
1/2 teaspoon salt
1/4 teaspoon 1/4 teaspoon black pepper
1/8 teaspoon freshly ground clove, ( optional )
one prepared flaky quiche crust pre baked

Preparation

Prep the Vegetables
Preheat your oven to 375°F (190°C). In a skillet over medium heat, sauté the chopped shallot for 2–3 minutes until soft and translucent. Add the baby spinach and cook for another 2–3 minutes until wilted. Stir in the peas and cook for 1–2 minutes, just until heated through. Remove from heat and set aside.

Make the Egg Mixture
In a mixing bowl, whisk together the eggs, heavy cream, and whole milk until smooth and well combined. Add the shredded Gruyère, crumbled feta, half of the chopped dill, basil, salt, black pepper, and a pinch of ground clove (if using). Stir until evenly mixed.

Assemble & Bake
Pour the egg mixture into the pre-baked quiche crust. Arrange the tomato slices on top, then sprinkle with the remaining fresh dill and basil. Bake in the preheated oven for 35–40 minutes, or until the quiche is set in the center and the top is golden brown.

Cool & Serve
Remove the quiche from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy your delicious Mediterranean quiche, filled with fresh herbs, sweet peas, and savory cheeses!

Recipe Tips & Suggestions

Storing Quiche:

You can store leftover Quiche in the refrigerator for 3-4 days. Cover the Quiche tightly with plastic wrap or aluminum foil to keep it from drying out.

Freezing Quiche:

Quiche can be frozen for 2-3 months. To freeze, wrap the cooled Quiche tightly in plastic or aluminum foil, then place it in a freezer-safe bag or container. When ready to eat the Quiche, remove it from the freezer and let it thaw in the refrigerator overnight.

Reheating Instructions

Oven: Preheat the oven to 350°F (180°C). Place the Quiche on a baking sheet and cover it with foil. Bake for 10-15 minutes or until heated through.
Microwave: Place a slice of Quiche on a microwave-safe plate and cover it with a damp paper towel. Microwave on high for 30-60 seconds or until heated through.

Rana’s Notes!

Please note that this recipe is designed to make two 9-inch quiches. If you are making only one quiche, be sure to cut all ingredients in half accordingly. However, if you end up with extra filling, don't worry! You can bake it in a muffin tin for mini quiches or make an omelet. Just be sure to spray the muffin tin with cooking spray before adding the filling. Enjoy!
