Blind baking is used when making a quiche or tart crust where the crust is partially or fully baked before adding the filling. On the other hand, the no-bake dough is a crust that doesn’t require any baking before the filling is added.

The main reason for blind baking a quiche or tart crust is to ensure that the crust is fully cooked and crisp. Blind baking also helps to prevent the crust from shrinking or puffing up during baking. By partially or fully baking the crust before adding the filling, the crust becomes more stable and can better hold the filling without becoming soggy. While it requires a little extra time and effort, it’s well worth it for a perfectly baked quiche or tart.
