2.5 lbs oats (I used gluten-free organic)
4 oz whole almonds
12 oz chocolate Pieces (70% cocoa)
4 oz honey
2 oz maple
8 oz unsalted butter
4 oz coconut (shredded and unsweetened)
4 oz dry cherries
2 teaspoons salt

Preparation

Prepare the Wet Ingredients
Preheat your oven to 350°F (175°C). In a small saucepan over low heat, melt the unsalted butter. Once melted, whisk in the honey and maple syrup until well combined and smooth. Set aside to cool slightly while you prep the dry ingredients.

Mix and Coat the Oats
Add the oats, almonds, and salt to a large mixing bowl. Pour in the melted butter mixture and stir well until all the oats are evenly coated. Spread the mixture out onto a baking sheet in an even layer.

Bake and Stir
Place the baking sheet in the preheated oven and bake for 12 minutes. Remove from the oven and give the granola a good stir to ensure even toasting. Return the tray to the oven and bake for another 12 minutes. If the oats are not yet a light golden brown, leave them in for a few extra minutes—just keep a close eye so they don’t burn.

Toast Coconut & Add Chocolate
While the granola finishes baking, spread the shredded coconut on a baking sheet and toast it in the oven for about 8 minutes, tossing halfway through to prevent burning. Once golden and fragrant, transfer the hot coconut into a large mixing bowl. Add the chocolate pieces right away, and stir with a large spoon until the chocolate melts and evenly coats the coconut.

Cool & Finish
Transfer the chocolate-coated coconut mixture back onto the baking sheet and spread it out evenly. Let it cool completely. Once cooled, mix in the toasted coconut and dried cherries. Enjoy your homemade chocolate granola as a snack, breakfast topping, or straight from the jar!
