2 medium-size avocado
1 small shallot (diced)
1 medium-size tomato ( a bit extra chopped to add to the top
1 bunch cilantro (chopped fine to leave a tablespoon to add to the top)
1 serrano or jalapeno pepper (diced)
2 garlic cloves (minced)
2 lemons zest and juice
2 tablespoons sour cream
1 ½ teaspoons salt
1 teaspoon black pepper
½ teaspoon cumin
½ teaspoon coriander

Prep & Mash the Avocados
Cut the avocados in half, remove the pits, and scoop the flesh into a mortar or mixing bowl. Add the lime zest and mash until mostly smooth, leaving a few chunks for that perfect guacamole texture.

Add the diced shallot, tomato, and pepper to the mashed avocado and gently mash a bit more to combine. Then stir in the chopped cilantro, lime juice, sour cream (the secret ingredient!), and all the spices. Mix until everything is well incorporated.
