4 cups unsalted mixed nuts | |
½ cup pumpkin seeds | |
2 tablespoons sumac divided | |
2 tablespoons Za'atar divided | |
2 egg whites | |
2 tablespoons honey | |
1 tablespoon each black and brown sesame seeds (optional) |
Preparation

Preheat the oven to 350F and line a baking sheet with parchment paper, lightly sprayed with coconut oil.
In a large bowl, combine the unsalted mixed nuts, pumpkin seeds, and black and brown sesame seeds (if using).

Sprinkle 1 tablespoon each of sumac and Za'atar over the nut mixture and stir to evenly distribute the spices.
In a separate smaller bowl, whisk together the egg whites and honey. Add half a tablespoon each of Za'atar and sumac to the egg white mixture, and whisk until frothy and well blended.

Pour the egg white mixture over the mixed nuts and stir until all the nuts are well coated.
Spread the nut mixture evenly on the prepared baking sheet. Bake in the preheated oven for 10 minutes

After 10 minutes, reduce the oven temperature to 250F. Carefully flip the nuts using a spatula.
Continue to roast the nuts for an additional 20 minutes, or until they are nicely crisp.

Remove from the oven and let the nuts cool. Once cool, sprinkle with the remaining Za'atar and sumac.
Enjoy your Za'atar spiced nuts as a snack, on salads, or as a part of your cheese board. Store any leftovers in an airtight container.
