½ cup yogurt | |
2 tablespoons red pepper paste | |
1 tablespoon dry oregano | |
½ teaspoon chili flakes | |
1 teaspoon cardamom | |
1 teaspoon cumin | |
1 teaspoon turmeric | |
1 teaspoon Aleppo pepper | |
1 teaspoon sumac | |
1 teaspoon paprika | |
½ teaspoon black pepper | |
2 teaspoon salt | |
10 cloves roasted garlic (smashed plus 2 tablespoons extra olive oil) | |
Juice of 1 lemon |
Directions
Soak and wash the drumstick with white vinegar and salt, rinse well and pat dry.

In a large bowl, add all the spices, the yogurt, roasted garlic, olive oil, and lemon juice until the ingredients are fully incorporated.

Add the chicken drumstick and mix well; let it set in the fridge for at least 4 hours.

Preheat the oven to 375 F, arrange the chicken drumstick in a deep pan. Cook for about 25 minutes until the internal temperature reaches 165.

Serve with yogurt-feta dipping sauce.
