My Favorite Tomatoes and Eggs for Breakfast

There were two good meals my dad was able to cook. One of them was tomatoes and eggs, which is also known as shakshuka. Every Thursday, my dad would come home before my mom. Since he never wanted to leave us hungry, he would cook us banadora with baied wiche, which translates to tomatoes with eggs. He would make the dish within half an hour, and we would grab lots of fresh pita bread to dip into the dish. We were always full and happy, and he would win a point with my mom. 

Another great breakfast dish is my Oatmeal drenched with homemade almond milk. It is easy, tasty and an excellent diet food.

I have created my own tomatoes and eggs recipe to surprise my family.

This recipe is my personal favorite way to make this dish. I took the best parts of my father’s recipe and the traditional Moroccan shakshuka recipe to make this dish my own. While tomatoes and eggs are traditionally eaten for breakfast, this dish can be eaten at any time of the day. It is also an excellent addition to a Sunday brunch since it is unique, colorful, and delicious. 

What Is Shakshuka?

Shakshuka is a famous breakfast dish in The Middle East and African countries. The fun name, shakshuka, simply refers to a dish of poached eggs in a spiced tomato sauce with onions and chili peppers. Shakshuka is similar to huevos rancheros and often considered a Mediterranean version of the dish. This dish is from Moroco and its tastes heavenly.




Adjust Servings
5 large tomatoes (ripe and diced)
1 tablespoon olive oil
½ onion (chopped)
3 clove garlic (minced)
½ cup diced yellow pepper + ½ diced orange pepper. (You can also add red or green peppers.)
2 tablespoons diced jalapeno pepper
¼ cup chopped kalamata olives
½ cup shredded halloumi cheese
¼ cup fresh chopped parsley
5 eggs
¼ cup water
one teaspoon of each salt, black pepper, turmeric, and Aleppo pepper. Save a pinch of the Aleppo pepper to sprinkle on top and Italian parsley.


In a large, semi-deep skillet over medium-high heat, add the olive oil, followed by the onion, and saute for 2 minutes.

Then add the diced pepper, the garlic, and the spices and saute for a minute.

Add the diced tomatoes and mix everything all together.
Let cook for about 5 minutes, and add ¼ cup of water. Mix the ingredients, cover the skillet, and cook for about 30 minutes on low heat.

The tomato sauce should now be thick. Take the back of a large spoon and make a dent in the tomato sauce. Then, crack the egg in a small bowl and place it in the indented tomato sauce. Do the same for the remaining eggs.

Then add kalamata olives and shredded cheese. You can either finish cooking the dish in a preheated oven or put a lid on the skillet and let the eggs cook more. The traditional dish makes the eggs over easy, but my husband likes it more cooked. It is entirely up to you.

How to Serve Tomatoes and Eggs?
Serve tomatoes and eggs in a deep dish and sprinkle some Aleppo peppers and fresh parsley. I love to eat this tomato and eggs dish for breakfast or as part of a large brunch spread. You can serve it on top of homemade hash brown or potatoes au gratin. The potatoes are amazing with the flavorful shakshuka tomato sauce. You can even get fresh pita bread and dip it into the sauce and runny egg yolk.

How to Store Tomatoes and Eggs?
Tomatoes and eggs are a great leftover dish. In fact, some people even believe it tastes better the second day since all of the spices will have time to absorb more into the eggs. By the second day, the ingredients will have more time to homogenize and create a depth of flavor. To store the leftovers, place them in a tightly sealed container and store them in the refrigerator. It can last for about 5-7 days.

How to Reheat Tomatoes and Eggs?
The best way to reheat this dish is to heat them on a stove. This is because the dish contains eggs, which may get rubbery if heated in the microwave. Using a stove will also allow the dish to heat up more evenly.
