Stir in the diced tomatoes and half of the crumbled halloumi cheese. Cook for 4-5 minutes until the tomatoes are heated through and the cheese starts to melt

Crack the eggs into the skillet, season with salt and black pepper to taste, and gently stir to combine with the tomatoes and cheese.
Sprinkle the remaining shredded halloumi cheese over the top of the mixture.
