For example, lobster takes center stage in Maine in this delicious and versatile stew.

Mix well with minced garlic, tomato paste, and fresh diced tomatoes. Add dried chili peppers, bay leaves, black pepper, salt, and sugar and mix well for 2 more minutes.

Add one cup of wine and boil. Next, add only the marinated fish pieces. Lay them flat on the bottom of the pot. Add three cups of stock, boil, and cook for another 5 minutes. Add the vinegar.
