Whole Beets and Shallot Salad with Mandarin Vinaigrette

Everyone loves a tasty beets and shallot salad recipe, and this recipe is unique since it also utilizes the green, leafy part of the beets! The greens of the beets are surprisingly delicious, and they are smooth, silky, and mild in flavor. 

This whole beet and shallot salad is a salad with the nuttiness of roasted beets and the rich taste of caramelized shallots. The best beets salad dressing for this recipe is my mandarin vinaigrette dressing. It is sweet and fruity, which goes well with the garlic and chili peppers in the salad. This healthy recipe should be served warm or at room temperature for the best taste.

How Long Should The Beets Roast For Beets and Shallot Salad? 

The roasting time for the beets depends on their size. Larger beets will generally take longer to cook, but you can cut them in half if you want to shorten the cooking time. Beets generally take anywhere from 30 minutes to an hour. When roasting beets for salad, check to see if they are done by poking them with a fork. If the fork goes through the beets easily, they are done roasting.

Ingredients:

8 medium-size beets with their greens
2 tablespoons olive oil
2 shallots (sliced thin)
2 garlic cloves (minced)
1 teaspoon red pepper flakes
Salt to taste

Directions

Preheat the oven to 400 F.
Cut the beets and separate them from their greens. Wash the greens and then roughly chop them.

Peel the beets and cut them into halves. Toss them in one tablespoon of olive oil, salt, and pepper and roast them in the preheated oven for about 30 minutes.

In the meantime, over a medium-size skillet on medium-high heat, add one tablespoon of olive oil and add the sliced shallots. Saute them for about a minute. Add the minced garlic and saute for another 30 seconds. Then add the beet greens and sprinkle the red pepper flakes and some salt. Only cook the vegetables for about 3 minutes.

Toss the beets and the sauteed greens in a bowl, add two tablespoons of mandarin vinaigrette salad dressing and toss the ingredients together. Enjoy!

What Else Can I Add To This Salad?
This salad is perfectly tasty on its own, but there are a few ingredients that can make this salad even better. Goat cheese and beets are a classic combination, and the saltiness of the cheese will bring out the flavors of the vegetables. You can also add slivers of almonds for that extra crunchy texture. Feel free to add any ingredients you can think of to the salad and make it your own.

What If I Do Not Have Mandarin Vinaigrette Dressing?
You can find my easy recipe for mandarin vinaigrette dressing here. However, if you don’t have the ingredients on hand, you can make a quick salad dressing with orange juice and olive oil. Just add about a tablespoon of orange juice to olive oil and mix them together.
