Farmer’s Rice with Za’atar and Feta

Farmer’s rice with za’atar and feta is a healthy and filling rice dish that is perfect for lunch or dinner! This rice dish is a vegetarian meal all in itself. It is made with many different aromatic herbs and vegetables. I like to add asparagus, red onions, tomatoes, pine nuts, feta cheese, mint, parsley, and olives. Farmer’s rice is packed with many different flavors, and it is super easy to make! In fact, you can have an entire meal ready in 30 minutes. 

This rice dish is salty, earthy, and has plenty of fresh vegetables to brighten up the dish. Farmer’s rice is a tasty rice dish that everyone can love. Even your children will enjoy it! You can even personalize it by adding your favorite vegetables.

What Type of Rice Should I Use?

The best rice to use for farmer’s rice is jasmine rice. Jasmine rice is long, thin, and firm enough to not become mushy. Other types of short-grained rice can easily become mushy when cooked, but jasmine rice will maintain its shape and firm texture. You can also use other types of long-grain rice, such as basmati rice, but jasmine rice is the best since it has a slightly perfumed flavor. 

What Can I Add To Farmer’s Rice? 

You can add any vegetables you would like to this farmer’s rice. I like to add Za’atar and feta since it gives the rice an earthy, savory flavor. If there is a specific vegetable you do not like, you can easily replace it with something you do like! You can add vegetables like zucchini, squash, green beans, or anything else you have in the refrigerator. 



Adjust Servings
cup jasmine rice (washed and soaked in water for 20 minutes)
1 cup fresh asparagus (trim and cut into smaller pieces)
½ cup red onion (chopped)
3 garlic cloves (minced)
1 cup fresh tomatoes (chopped)
½ cup crumbled feta cheese
½ cup sliced kalamata olives
¼ cup toasted pine nuts (optional)
½ cup fresh mint (chopped)
¼ cup fresh parsley (chopped)
2 tablespoons zaatar
1 teaspoon paprika
1 teaspoon sumac
1 teaspoon salt
3 tablespoons olive oil
2 cups warm water


Heat a large sauté pan over medium-high heat. Add the olive oil followed by the onions and sauté for 2 minutes.

Add tomatoes and garlic and sauté for another 2 minutes. Add the mix of spices. Then add the asparagus and the olives and mix everything all together.

Add the rice and add 2 cups of warm water. Bring everything to a boil. Close the pot with the lid and lower the heat to low. Let everything simmer for 20 minutes.

Open the cover and let it rest for five minutes. Add the feta cheese and the fresh herbs and mix them into the rice using a fork. Sprinkle the toasted pine nuts on the top. Enjoy!

How to Store Farmer’s Rice?
Store leftover farmers’ rice in an airtight container and keep it in the refrigerator for 3-4 days. When you are ready to eat it again, you can reheat farmers’ rice by sprinkling a little bit of water and putting it in the microwave for about 1 minute. You can also heat it on the stovetop and add a little water. The water will keep the rice from drying out when the rice is reheated.
